To the amazement of family and friends I decided to ditch the banking job and began to make the 10 years of brewery planning a reality. In 2002 while sourcing information for the brewery, Fergus and I met. A short time later a Barossa local named Vaughan Heenan wandered into Chateau Yaldara in search of a Brewery which he heard was being built. What Vaughan found was a partially installed brewery, 2 men full of passion for good beer and complete chaos. Vaughan has been bringing order to the chaos ever since. Mark, Chapter One, Verse One Mark Prior is our Brewer and his job clear, make the best beer in the land. Beer with complexity and quality such that they can sit next to the best wines in the world. Mark's passion and talent made him ideal for the role. Additionally Mark had state of the art equipment at his disposal. We had taken our limited budget (tiny when compared to the majors) and invested in the best brewery equipment available. It allows Mark to brew in small quantities so he can personally attend to each hand crafted batch, ensuring the highest quality. We have spared no expense sourcing the best ingredients and their flavours will not be masked by preservatives. While this limits the amount we brew, it ensures what we do brew is premium beer of the highest order. Quality over quantity and precision over profit. Water into wine...I mean beerWe chose Australia's premier wine region as it is our intention to make beer that can be appreciated for it's complexity in the same way wine is enjoyed here and around the world. Being in a wine region of such prestige means we have been able to learn form the best wine makers in Australia. We have been able to incorporate the same adherence to quality which has made wines from this region such a global success.
